Paprika Fried Potatoes With Kraut

Ingredients

  • A few large potatoes
  • 1/2 cup Be Nourished Sauerkraut of your choice with most of the liquid squeezed out
  • 1 small onion sliced
  • 1 tbsp coconut oil or butter
  • 3/4 tsp paprika
  • optional 1/2 tsp smoked paprika
  • salt and pepper

Instructions

  1. Boil the potatoes, let cool and cut into cubes.
  2. Heat butter or oil and sauté onion, then add potatoes and fry until they are cooked on all sides.
  3. Turn down heat to low and stir in spices and salt until potatoes are coated in paprika.
  4. First cook the potatoes, take off the heat and leave to cool slightly.
  5. Stir in the kraut, salt and pepper and serve.
